Freezing green beans
In response to a question of mine, Garden Gnome @ http://www.momskitchencooking.blogspot.com/ posted instructions on canning beans. Unfortunately I don't have a pressure canner so instead I'm freezing the 7 or so pounds of fresh green beans that I got at the market this last week. Per my friend Gayla's instructions I blanched them for 1 minute in boiling salted water and then put them in a cold water bath. Once they had cooled I put them out on a cookie sheet and stuck it in the freezer to flash freeze. Once they are frozen I will transfer them into gallon freezer bags and stuff them into the big freezer. And we'll have fresh green beans for Christmas dinner. Oh, I've got to remember to make a turkey sign for Gayla for The Market.
